About Me

I am a chef, restaurateur, and now a MScCCAFS student in NUI Galway. As a chef and business owner my partner and I have, at the core of our model, strived to create an ambitious yet sustainable restaurant with minimum food waste, monitored energy usage, direct contact with and support of small farmers and an equitable and fair place of work. This has led to us forging firm friendships with our suppliers and led to some of our staff branching out and developing responsible and sustainable businesses of their own.

The opportunity to study in the MScCCAFS program in the Ryan Institute, NUI Galway has allowed me to explore and appreciate the challenges the planet and its citizens are set to face and also to appreciate the scale of action needed going forward
